Whats a good banquet theme?

Theme it like a Medieval European banquet where everyone eats with their hands on ribs, chicken turkey etc. I am taking some of this from the Renaissance Pleasure Fair and Medieval Times in Buena Park. Instead of everyone dressing the part, you can have some people in dress performing some of the period tunes and fencing competition. z
